“It takes a lot of details to bring out an optimal taste, and crafting the Rare Cask is something very special,” says The Macallan’s master distiller Nick Savage. “One thing that gives the Rare Cask its peerless identity is that casks used during maturation will never be applied in any other blends.”
All this is executed in the name of rarity; with handpicked, seasoned sherry oak casks conferring a deliciously fruity and rich woody scent to the nose. On the palate, the Rare Cask tingles with a hint of raisins, seguing into spice, chocolate and zest. The resounding success of the Rare Cask and The Macallan as a whole, has necessitated expansion plans, with a new distillery opening in summer this year. “This is due to our commitment in ensuring the spirits produced at the new distillery will be identical to the old,” says Savage. “It won’t be easy, but it’s definitely worth the wait.”
