Continuing a collaboration that began in 2013, when chocolatier Christopher Curtin of Éclat Chocolate convinced chefs Anthony Bourdain and Eric Ripert to collaborate on the Good & Evil chocolate bar, the trio now has a follow up. It’s called Salt & Sin.
The original Good & Evil appealed to both devils and angels, as represented by the chefs – Bourdain the cheerful rebel and Ripert the consummate elegant Frenchman. Using Fair Trade Peruvian Pure Nacional organic cacao beans, the dark chocolate was an ‘evil’ pure indulgent treat to balance out the pleasures of ‘good’ food. Salt & Sin uses a similar approach, this time added spices to the mix. The 72% cacao bar is flavoured with complex notes of orange, fennel and Himalayan sea salt. It seems an odd combination at first, but the touch of savoury is balanced out by a hint of citrus sweetness, resulting in a chocolate that – while not as diametrically opposed as good and evil – is still a devious mash-up that tastes far better than how it sounds.
