At Grand Hyatt Kuala Lumpur, the 2024 edition of #DinewithChef is spotlighting a melting pot of culinary cultures, bringing together cuisines from around the world in a month-long dining fest within the city. This entire month of May, head chefs from Grand Hyatt Kuala Lumpur, Park Hyatt Kuala Lumpur, and Hyatt Centric City Centre Kuala Lumpur are teaming up with local and international talents from Indonesia, Poland, Japan and Malaysia to showcase their gastronomic craftsmanship in the kitchen. This special occasion will uncover various spaces within the hotel, including familiar restaurants such as THIRTY8 and JP teres, the semi-alfresco Poolhouse, and the newly opened event space on Level 5.
Robb Report Malaysia recently took a sneak peek of this series with an intimate 17-course Sake Tasting Omakase dinner at Level 5 in collaboration with Sushi Azabu, a distinguished Michelin-starred brand currently tucked on the ground floor of Petronas Twin Towers (KLCC). Originating from Tokyo’s culturally thriving Azabu district, the brand has already established four other branches worldwide. Overseeing this exclusive Omakase dinner is executive chef Shinpei Kujiraoka of Sushi Azabu Kuala Lumpur hailing from the bucolic Chiba Prefecture in Japan.
At 22 years old, Kujiraoka set out on a path driven by ambition to shape his culinary craft. After graduating, he joined global hospitality group Plan Do See Inc., and dove headfirst into the dynamic realm of the service industry, which laid him the groundwork for these future pursuits. With a desire to fine-tune the intricacies of sushi-making, Kujiraoka ventured on a pilgrimage to Tsukiji, Japan’s popular fish market. Surrounded by the hustle and noise of the lively market stalls, he began studying numerous fish selections that were within reach. Kujiraoka also dedicated himself to an arduous training regimen at a sushi school, where he honed his skills in the art of sushi crafting.
This extensive omakase menu features a variety of highlights, including sashimi, seasonal nigiri with the freshest catches, individual sushi selections such as chūtoro (medium fatty tuna), otoro (fattiest part of the tuna belly), and anago (salt-water eel), as well as uni tasting, rolled sushi, and more. Priced at RM628 per person, this exclusive partnership with Sushi Azabu on 17 May guarantees an evening of premium dining, enjoyment and indulgence.
