Pollen in Singapore has collaborated with Hendrick’s Gin for a three-month pop-up at the Gardens by the Bay’s Flower Dome. The afternoon tea presents bites inspired by the 11 botanicals used in Hendrick’s gin.
Enjoy 12 sweet and savoury treats that complement two Hendrick’s gin cocktails. Sink your teeth into savouries that include tomato gazpacho with cucumber and grape sorbet, braised duck with Stilton and chilli cookie, and braised beef cheek in lemon pickled carrot.
The sweets give a delectable twist to the afternoon tea, with treats such as Lady Grey petit choux, a dried apple and cranberry scone, and an elderflower and strawberry jelly.
Accompanying you for the day are the two cocktails, Miles & Miles, and Matcha Mint Mello. The former mixes gin with chamomile tea, lemon guice and St Germain elderflower liqueur, while the latter uses mint leaves, lime juice and matcha tea.
As theatrical as it may be, ask for a seat by the terrace, and you’ll be able to watch bartenders shake your cocktails in front of you.
