Red beets and pink fish for a rosy tint to your midday meanderings, anyone? Axis Bar and Lounge at Mandarin Oriental, Singapore has come up with a tea experience starring beetroot and salmon.

Savour an 18-dish menu that seems to have come right out of a molecular gastronomy cookbook, with a balanced mix of sweet and savoury creations. The Forest Berries Jelly topped with Beetroot Citrus Foam sets the tone for the entire menu to come. The highlight, of course, is 16-Hour Home Cured Beetroot Salmon with Yuzu and Dill, but another fish contends well in Confit of Ocean Trout Roll with Burnt Tobiko. For cheese lovers, the Beetroot and Goat Cheese Pie will have you longing for seconds.

You’ll see beetroot all ways: roasted, pureed, made into jam and sponge. Given that it’s tea time, you can expect no less than six sweet treats such as Pecan Beetroot Almond Tart and Sakura Cherry Mousse.
