January 2017 is looking to be a great month for wine aficionados, with Resorts World Genting hosting a one-night-only wine and dine event with French winery Château Angélus and its restaurant the Logis de la Cadène at E18hteen Inspired Dining on January 21.
Château Angélus wines are a result of the combination of bold decisions on vine varieties and an outstanding terroir. It is this unique character born of the south-facing Saint-Emilion slopes with its large proportion of Cabernet Franc that characterises the lush, dense, elegant wines. Guests of the Château Angélus wine dinner will be treated to a stunning flight of this greatness, paired with equally exemplary cuisine from the Head Chef of Logis de la Cadène, Alexandre Baumard, and the restaurant’s Pastry Chef, Damien Amilien.
Founded in 1848, Logis de la Cadène is one of the oldest restaurants in Saint-Emilion. It was so loved by the Boüard de Laforest family – the restaurant is close to Château Angélus – that it was acquired by the family in 2013. Chef Baumard, who has worked with Paul Bocuse and Christophe Bacquié, has crafted a stellar menu which represents the spirit of Logis de la Cadène, as well as the heart of Saint-Emilion, just for the night.
The experience begins with Périgord truffles, considered the black diamonds of the French truffles, served in Parmesan risotto. This is followed by foie gras in ravioli with vegetable pot au feu, reminiscent of a classic French home-style stew. A lighter course of scallops with cabbage, flowers, greens and oranges will then precede with the hen pheasant stuffed with foie gras and melanosporum truffles served with vegetables and wine sauce aerated with foie gras.
Young, talented Logis de la Cadène Pastry Chef Damien Amilien closes the meal on a sweet note with his cocoa mousse, heart of guanaja and tonka bean ice cream served as a chocolate tart.
Each wine pairing menu is priced at RM1,388 nett.
