Every chef worth his kitchen whites evangelises about local produce like it’s a prerequisite to eternal salvation. But as any intrepid gastronome must sometimes wonder, is it worth all the hype? From plant to plate, does it actually taste better just because it spends less time in transit?
One of the best restaurants to verify your curiosities is Sitka Studio, on Jalan Batai, Damansara Heights. And this coming 4 January is the perfect day to discover if their provenance driven menu passes muster. Restaurateur Jenifer Kuah and head chef Christian Recomio have invited chef Brian McLeish of the Michelin recommended Moonfish Cafe, Aberdeen, to cook with them for one night only.
Both Scottish chefs will be combining their talents to highlight the very best of Malaysian caught, picked, foraged and grown. In a cosy setting that aims to let the food speak for itself, enjoy recipes like Yuba tartlet with sweet potato, wagyu and foie gras. Or the 28-day aged duck with fermented shiitake, smoked shallot and sherry caramel. Wind up your 8-course menu with British custard tart with palm sugar and pandan. Natural wine and cocktail pairings are also available upon request.
