Cantaloupe at Troika Sky Dining, Kuala Lumpur presents its second pairing dinner collaboration with award-winning champagne house Tendil & Lombardi, taking place on 27 October, 2016.
A young, vivacious champagne house that has an entrepreneurial zeal and start-up approach, Tendil & Lombardi champagnes are made with craftsmanship – eliminating as much machine work as possible, and instead retaining the ‘made by hand’ process from harvesting to bottling and ageing. Stephane Lombardi will be present at the dinner, to shed light on the new cuvees that guests will be enjoying.
The five-course pairing dinner will begin with a starter of cured salmon cornetto, followed by a geoduck carpaccio and a poached duck egg. The main will be a blanquette de poussin and dessert will be a pan-seared foie gras served with maple syrup ice cream and spiced bread. Pairing champagnes will be, in order, Tendil & Lombardi Cuvée Brut, Tendil & Lombardi Cuvée Blanc de Noirs, Tendil & Lombardi Cuvée Rosé, Tendil & Lombardi Cuvée Hyménée and Tendil & Lombardi Cuveé Blanc de Noirs 2009.
