Kuala Lumpur’s formidable Friday traffic often strikes fear in the hearts of even the most determined gourmands, but Sitka Studio is well worth nudging your way through the evening crawl for. Neatly nestled on Jalan Batai above Sitka Restaurant, Studio opens its doors weekly for dinner on Fridays, showcasing its clever, ambitiously constructed dishes – the product of a creative collaboration between restaurateur Jenifer Kuah and Executive Chef Christian Recomio.
With a set menu that changes every month (a 5-course menu starts from RM195 per person, with the option to upgrade to 7 courses for RM275), Studio’s cuisine distinguishes itself through its thought-provoking interplay of textures and flavours. You might find, for instance, an Indonesian tuna tartare served with apples cooked in daikon juices and vice-versa, or a rich chicken parfait contrasting with the crunch of a wafer-thin tofu skin tart and dehydrated mulberries.
On-site fermentations and labour-intensive cooking techniques are also signature elements of Studio’s kitchen: grilled kailan is served alongside golden raisins, capers, and creamy house-made ricotta, while their excellent, freshly baked barley and miso sourdough comes with cultured butter. Don’t forget to explore their fascinating selection of natural wines, including a 2017 Lucy M. Rose Frizzante and a 2015 Patrick Sullivan Pinot Noir, entitled ‘A Mother’s Love’ – an extension of Studio’s fondness for food in its cleanest and simplest form.
